You can buy teak and holly in 4x8 sheets in different thickness.
To install pattern the floor (I like cutting door skin into 1" strips which can then be broken by hand or cut with a utility knife and glued together with a hot glue gun to make my patterns) and then prep the floor, (assuming it is fiberglass/gel coat) by sanding it with a heavy grit paper. Make sure the surface is clean and glue it down using a good quality adhesive. It's really not too hard. If you have a floor that curves up or for lack of better terms has rolls in it buy a thinner sheet so that you can score the back and bend it into place. You mentioned sub floor, teak and holly does not require any sub floor like tile would in your home for example but f you have no floor at all or it is in disrepair than standard marine ply would be sufficient sub floor.
