Your right, I think it is better to cook on cast iron. That is all my mom ever used, I have a hard time getting anything to not stick using her old cast iron skillet. Start out thinking Sunnyside up with the egg?s end up scrambled.:(
A properly seasoned cast iron pan is the best non-stick pan you will ever find. If your food is sticking, you need to re-season the pan.

Silly question here but I'm curious....................does cast iron only work well on gas stoves or is it good on electric hobs?

You mean cast iron will also work on gas?;) Actually, it works best on a wood-burning cook stove.

Boomyall, try sneeking one skillet in and see if you can get away with it. Actually, the clean-up of my well seasoned Dutch Oven and Griddle is amazingly fast and with olive oil and kosher salt they come clean as a whistle and keep that soft black finish. I just clean them while they are still fairly hot.

Scroll down the thumbnails on the left side of the screen, the Souse Mold is ninth from the bottom. I would kill for one of those!!!!! Very cool! Rare too, I probably will never see one.

Eggs are a great way to learn to cook on the cast iron. They are very delicate, and once you can cook eggs over easy or a nice omlet, you have cast iron down pat. Use low heat and a well seasoned skillet. If you have a good seasoned skillet and eggs still want to stick on low heat, fry about ten batches of french fries in the skillet. That is really the best way to start getting that satiny black non-stick finish that the old well worn cast iron has.

I also love my Cast Iron cookbooks! I was getting tired of cooking, but this has re-energized my enthusiasm for it.

I have a cast-iron skillet that was given to me by my grandfather; it was with me through my scouting years, and is still a part of my current cooking repitoire, we use it in the house as well as in the outdoor kitchen. It's a great skillet that when used with the proper heat cooks flawlessly every time. The skillet is over 50 years old; the first time my girlfriend saw me use it, her response was "oh gross", but after I showed her how well it cooks, she now loves using it. I am guessing that it still has a couple hundred good years of cooking left in it!​
