Thermostat removed....good or bad?

I have an old 1985 model 20hp mariner two cylinder 2 stroke. Sent it to my local repair shop to be checked over since a body overhaul and pump rebuild.It fired up quickly and had a strong and steady tell tale. They scanned the engine with an infrared gun and found a hotspot before the thermostat ( new one fitted )of about 90 celcius. With the thermostat removed it is a little cooler. The old thermostat had siezed in the full open position and I had no problems with overheating before. Should i worry about refitting it or leave it out? also the pump is ok, new gaskets fitted.

I would install a new thermostat.
I am sure someone will come along and explain why you should.

Use the t-stat. Without one the engine can run to cold and actually cold seize a piston in colder weather/water and it reduces "coking" of the ring lands.
