I just became the "proud " owner of a 73 winner cougar 18'-19' boat attached to the trailer I was really buying. It doesn't seem to be in too bad of shape for its age. Does anybody know anything about them and if it's really worth saving?

As an old 'junk yard dog' anything is worth saving. It all depends on how much you're willing to spend and your level of expertise in fiberglass and mechanical repairs. Ah, not to mention electrical, woodworking, paint, etc.
I'd definately do anything mechanical first just to get it running then go on to your structural components and finish up with cosmetics.
