His truck doesn't have a 700r4, it uses either the 4L60E or 4L65E. Although both transmissions are related (children, if you will) to the 700r4, the newer transmissions use electronic controls (thus the E in the name).
I have a Suburban with the 4L60E and the the 5.3L motor, and I don't have any issues when towing my 23' deck boat. The transmission doesn't hunt for gears or shift when I don't expect it to. Consider this a +1 for having your PCM flashed. I had mine flashed about 5 years ago. I didn't see the hoped for increase in mileage, but my towing has been just fine.
As the owner of one of those dodges (09 crewcab 1500) I can tell you that the coils in the back are really nice - even when towing 6K
But back to the 3/4 ton chev - their transmissions have a decent reputation, motor should last a good long time. I'd have no reservations about it as long as it was maintained before you got it.
The hunting in your current truck is more likely due to the 700r4 than it is your pontoon being too much for the truck itself.
