only a 1/4 cup oil, made my own Italian bread crumbs, some great spices, floured, egged and crumbs, 350 for 30 mins, flip for 30 more, so much less mess and healthier I would assume? Allrecipies.com, will advise how it turns out :) A whole lot less mess and lingering smell too!

sounds good. I just texted my wife to get the chicken breasts out of the freezer so we can try this tonight. Going to use panko crumbs and some extra seasoning. Pick up some fresh corn on the cob on the way home from work and it should be a great meal.

sounds good. I just texted my wife to get the chicken breasts out of the freezer so we can try this tonight. Going to use panko crumbs and some extra seasoning. Pick up some fresh corn on the cob on the way home from work and it should be a great meal.

I didnt have any Italian crumbs, so I made my own in the toaster oven, bread, butter, garlic powder and Pappys, then broke em all up, worked great with egg batter and flour :)

Try the same thing with shrimp. "Oven fried" is GREAT!!! Cook the shrimp for a lot less time, of course. "Oven fried" is great for anything you'd normally fry with breadcrumbs. It's not so good with flour, though; but that's just my opinion.

I'm going to keep experimenting, and swap to olive oil next time, love the flavor! :)

I made a variation of this last night. I dipped the chicken in a mixture of 1/4 cup mayonaisse, some buffalo wild wings parmesan garlic sauce, 2 TB of olive oil, 2 TB water, and some salt/pepper to taste. Then moved the breasts to the panko crumbs and then baked at 400 for 30 minutes.

Tasted great, was a big hit as well. We also had the corn on the cob I talked about. Best part was that my 2 older boys, 8 and 10, both helped make it and we ate together as a family.

Sounds great! Yeah, my son(12) helps w/ the cooking too, as well aas my girls(22 and 25) and it's great to have a nice family dinner together :)

Try using ranch dressing for your wet, and wheaties, or potato chips crushed up for your dry. 375 for about 20 minutes and viola!

Any kind of chips will work including tortilla chips. Add spices to your dry.

Most definitely!! Oh, my son and his buddy tried the leftover chicken last night, they are my toughest critics, said more spices needed, maybe chili pepper and Cajun spice, so that will be one change next time :)

i have been trying various ways of making fried/baked chicken.......tonight i tried a mock kfc recipe....the chicken was great...but the skin a little burnt or at least too crispy....i dont know if its my deep fryer or if its the batter.

i have been reading on line quite a bit......they all say soy bean oil is the trick to chicken.
even on man vs food....one place in kansas had what some say is the best fried chicken in the world.....they used soy bean oill.

i cant find it.....has any body used it?.....

just did a baked chicken thighs in the oven tonight........i used crushed up potato chips......

flower coat....egg batter coat.....then into the crushed potato chips/sage,garlic, paprica and about 5 other spices.....then to the pan.....
really good

If you look at the ingredients of "Vegetable Oil"... soybean oil;)

Chicken Cilantro!

2 tablespoons lime juice
2 tablespoons vegetable oil
1 teaspoon honey
4 boneless skinless chicken breasts
1 cup finely crushed tortilla chips
1 jar salsa
2 tablespoons minced fresh cilantro
1/3 cup shredded monterey jack cheese

in a shallow bowl combine lime juice, oil and honey. Dip chicken in lime juice mixture, then coat with crushed tortilla chips. place in an ungreased baking dish. bake at 350 until chicken is almost done then combine salsa and cilantro together and pour over chicken. Sprinkle with cheese and bake until chicken is finished.
