I have a 6hp 4 stroke Nissan outboard (think it's a 2003) that is on a Zodiac. I use it very lightly on lakes with my kids and sometimes on the ocean. It hasn't had any service in the last two years and noticed some oil had leaked during a move (think the movers had it on it's side) , so I wanted to give it a tune up. I called around and was quoted $250. Can't afford that. I'd like to tune it up myself but have no idea where to start. What would I need? Oil, oil filter(?), spark plug, impeller? Where's the best place to get them?

There is nothing to "tune-up" on that model. Parts are available from any Nissan, Mercury or Tohatsu dealer. You should change the gear oil, engine oil and replace the water pump kit. $50.00 in parts.

Indeed. Don't change just the impeller -- do the wp kit. Same labor, and works a lot better and longer. I would inspect the NGK DCPR6E spark plug, (check gap) and if clean tan, fine... if black and sooty from choking, change it at the same time.
