waking up 69 115hp

First, I'd like to thank everybody for making this the great forum it is.
I have a 69 115hp I'm waking up after 7 years of sleep, done the impeller, rebuilt the carbs, want to do the thermostat ( vernatherm). If I don't want
to drill holes, is the only way to change it by lifting the powerhead? When
done, is there a way to "prefill" the powerhead with water prior to first start
so it doesn't cook?
Also, how do you recommend torquing the flywheel to the reccommended 140 ft/lbs without
breaking anything?
