Should/can I add a generic water separator to my inline 6?

If you are running fuel with ethanol it is recommended.

my motor is a 1967 950ss, should I use the clear inline variety or the kind that looks like an oil filter?

The inline fuel filters do not normally seperate water. I therefore recomend the oil filter shaped ones. Use ones with a 3/8 fuel line connectors and hoses
