My max capacity for people and gear is 1200lbs. If I add a swim platform(90lb) and wake tower (50-60lbs), will this reduce my weight capacity to 1050lbs?

Yes, and that 1050# includes fuel and safety gear.

fuel? I figured safety gear. 26 gal of fuel is 200lbs. That does not seem correct. I would expect the max capacity to be gear and people.

The useful load on aircraft includes the weight of fuel, figured at 6lb per gallon for avgas. If you want more people, you have to carry less fuel. You could figure your fuel needs at 1/3 to; 1/3 from; and the final 1/3 for a reserve.

Just like aircraft, boats have a finite amount they can carry.
