If you're talking about clear coat over wood, like varnish, I would stick with varnish. The laminates look great, and look great longer. varnish will have to be sanded and redone every season. Laminates may hold-up twice as long. But then, when it comes time to restore or redo it, laminates are a nightmare. They are harder to prep. Varnish is somewhat ablative over time, and is much easier to prep for future additional coats. Laminates can also trap condenstation underneath, starting rot. They also are just as (if not more) suceptable to UV damage. <br />They are best used inside the cabin,galley, indoor bar countertop, and not exposed to the elements most of the time.<br />Just my too scents.
