I wouldn't worry about just draining the motor and leaving it that way. I've never put antifreeze in the block and haven't had any problems. If you want to add antifreeze though the best way to do it is to run the engine until it gets up to operating temperature so that the thermostat is open and then run five gallons or so through the muffs until it starts coming out the exhaust. West Marine or somewhere will sell you a kit to do it. But you can just sit a bucket on the swim platform and run a hose from there to the muffs. The engine will pull the antifreeze from the bucket.
The block runs all summer with just water in it. If there was ever going to be a problem with rust it would happen all year long.
I always fill my tank and add stabilizer, then run it for awhile to make sure that the stabilized fuel gets through the system. Then I spray fogging oil down the intake until the engine starts to smoke real good. Then I spray it into the intake as hard as I can until the engine dies. During this time you'll have to be adding the antifreeze.
Change the oils, take out the battery, and then put the boat away. The battery should be OK for the couple of months it's not in the boat but if you want you can give it a charge it before putting it back in the boat in the spring.
I'm aways weary of someone saying they want to store the block with antifreeze in it. If the antifreeze gets too watered down and doesn't get all through the block well then the motor could freeze.
I winterized mine last weekend. It doesn't take more than a couple of hours to do it.
