it should have a max hp plate on the boat. do not exceed that. and for reasonable performance, do not go under 70% of the rated HP.

I recently saw one of these ('79) with a 50 Evinrude on the back. I would think that is too much.
25-30 HP would seem more in the neighborhood.

I've got a 1999 Alumacraft modified V hull bass boat out back that has a 40hp max, and a Lowe 14' with a 57" beam width that says 25hp max.
I'd say that a 15 to 20 hp would probably do just fine but you could get by with a 10 hp if you had too, depending on the weight your carrying.

Also, just a note, most jon boats are referred to by their length and bottom width, so a boat with say a 56" beam width may only have a 36" bottom width, or less. My Lowe is a 1436. I have a similar Starcraft V hull that also has a 25 hp max, but runs along just fine with my 9.5hp on it.

I'd vote 25 MAX and 15 would be just fine.

I had a 25 Yam on a 14' Lowe but when I replaced the motor I went with a 15. The 25 was too much when the boat was empty; it's a tiller steer and used by a lot of children. Plus the 15 is easier to take on and off.
