What size prop is best?????

There seems to be a very wide selection of prop sizes! How do I find out which size is best for my ob?

I have a 1985 45hp mercury w/tiller handle on a 16 foot Kalamath aluminum fishing boat and a 1972 115hp mercury w/power tilt on a 1972 16 foot cheetah racing boat.

For a broad, I'm pretty knowledgable about my boats and motors but when it comes to determining what size prop for the best performance, well I'm totally clueless. HELP!!!!
