When should I use new foam?

Hi all, I was just curious to know if I should put new foam in my boat that I am restoring. I have the entire interior gutted, but the existing foam seems to be intact and pretty good shape. What would be the reasoning that I should put new foam in this thing?

make sure its not saturated under foam

Aluminum boat? If it's styrofoam and not rotting re-use it. the old 2 part foam used to soak up water and never dry.
