Really dumb question, but when reading a fish finder, where exactly are the fish that you see on the screen? I know that device the sends out the signal is mounted on the transcom, so I am assuming that the fish are off the back of the boat? If so, usually about how far out from the back of the boat are they?

The Instant you See them,..... They are Directly Under the Transducer.....
After That,.... It's a matter of Time & Speed.........

The sound waves are transmitted in a conicle shape from the transducer in a 20 degree pattern (typical application). So, the deeper the water is the larger the area of coverage is by the time the sound waves reach the bottom. The fish can be anywhere within the conical area.

Ideally you will figure a way to get the fish from under the transducer into the livewell...
