I think this is a excellent "how to" video for winterizing, and I like how they fog the engine. Can this same method be used on carbureted engines?

You can but with a carb engine you can get more oil in the cylinders spraying it straight into the carb. EFI's are not done this way because the oil will coat the sensors and cause issues next season.
Ive got a 3.0 Mercruiser with carb too. yep, add stabilizer.. you should be good. as to in garage that don't freeze,, your good there too, as long as it don't freeze...avoid any possibility by draining the block and manifold
