wood pieces on crestliner nordic

hello, my new to me crestliner nordic has a bunch of different wood trip pieces throughout the interior, mostly just thin trim pieces and the pieces that you step on getting in and out of the boat. they are in need of refinishing. what is the best process and products? looks like they had been varnished at some point, most of that has peeled off though. thanks

I would probably try to lightly sand them and use oil,.....

But I'm not sure that's the best route,...

i gots no pitchers and the boat as the the shop gettin seals so i can't go take any now, i just want to be ready for when it comes home. anyone else got any more idears?
