Would reversing the spacer and thermostat in a raw water 5.0 damage anything?

Long story short: Temp gauge wasn't registering on a 2001 5.0 w/bravo III.
After testing sender, gauge, ground, etc, I finally realized the T-stat was under the spacer, not above it. Swapped it over, everything runs fine and motor comes up to temp.
Prior to that, I had taken the boat from the launch ramp to the marina, roughly 1/2 hour ride. With an IF gun, motor was around 165* and t-stat housing was about 100*.
Now it is properly installed and motor runs around 180* on the gauge, about 165-170* on the IF gun, manifolds/risers are all around 95*.
Motor starts right up, no smoke, no noise, good oil pressure.

Is it possible I overheated anything, or was I just running it cold and keeping it in open loop?

it would starve the exhaust of water until the thermostat opened. so you may want to pull the elbows to inspect the flappers and the rubber exhaust hoses.

Thanks, I will check that out and see if I cooked anything.
I am just looking at this flow chart and it appears that the seawater coming in would go right to the exhaust manifolds unless I am following the path wrong.
