Amazon offers a Wiring Harness for GM that plugs into the Hood Switch that permanently disables that Horrible Feature, no button Pressing required. My car didn't have disable button, but that Harness fixed that Problem, cost was about $15(us).
Security and Remote Start are not affected by it either.
The Electric E Brake can be set up to hold the Car from rolling back on a hill when you take your foot off the Service Brake and before you put it on the Gas Pedal. It is a bit of a pain when you change Brake Pads, cause the Screwjack, used has to be retracted before you can press the Caliper...

Does the Paint on the Head/top of Block, look burnt?

Idle Timing is Dynamic, as it is what determines the Idle Speed. The Carbs are fully Closed for a lot of the Throttle Movement, just cracking open at the Pickup Spec . Once the Timing is Fully Advanced do the Throttle Valves really start to open
Try running it Briefly, on a much Oil Rich Mixture. If it Idles Better, I would be looking at the Upper Crankshaft Seal. Also check for any Oil Recirculation Line from the Crankcase up to the Upper Bearing Area.
or Pull the Flywheel and look for Oil at the Seal Area
Are you running the Motor on Muffs, in a Tank, or on the Boat in the water?
If on Muffs, you would be able to see all the Places that water will exit the Motor, not just the Teletale(I really don't put much Faith in them, as they just indicate water makes it to the Powerhead, and little Else)...
Does it die after 3 minutes at all speeds?
Spraying Carb Cleaner into a Carb does Eff all, except clean the Throat and Throttle Valve.
If the Motor can't Idle, it is likely the Idle Circuit is Dirty, and a Teardown and proper Cleaning required
Other Things... Is the Spark strong enough at both...

Have you tried holding the Switch on, after the Outboard is all the Way Up, and all the way Down? If not, do it a few Times, and then recheck the...
You Prop an Engine so it run at or Near the Top of the WOT Range. If you chose a prop because you like a certain Speed at a certain Rpm, and the Engine isn't getting to the WOT Range, you will be Torturing that Engine. But, hey, it is your Engine to wreck, and your Money to repair/replace it
I too learned to ski behind a 2 Stroke 40hp, even did some deep water starts on a Slalom Ski behind it. I too have also noticed that with the 4 Strokes, 150hp on a 15 ft boat, can barely pull a skier on 2 skis.
