Sounds like you have a gauge and sender compatibility issue.
Test the old sender, read the ohms open and closed
The 19p is most probable for a 19 foot boat and a 5.0. it's also the prop you had on the boat. So starting with the 19p and simple math like stated by Chris gets you to 23p
The drive you have will require a 23p +/- a bit during testing
So where did you pull the 15p that you keep holding onto?
Double check the compression, spec is 150 psi. A good mechanic would know that. 170-180 psi is BS or bad gauge
Could be coupler, however would not explain backfiring or shaking
fluctuating RPM, rough running and shaking sounds fuel system related. Either an air leak or water in the system...
Is the cable and shift assembly at the drive moving with the helm controls? Yes or No
If Yes, your issue is in the drive transmission (upper gear box)
If No, you have a control or cable issue
Get the right hose for below the water line.
That is bilge pump hose that you bought, which is OK to use above the water line.

Trace the grey wire from the ignition coil to the tach. trace the tan wire from your temp gauge to the sender
make sure ground wire on both gauges has continuity to ground. Make sure purple wire on both gauges has battery voltage when the key is on
