correctI will have to paint my bilge because gel coat won't stick, right?
Depends on how you plan to join the bottom of the deck to the top of the epoxy coated stringers. If you plan to use epoxy PB to attach the deck, then you can use either epoxy or poly & CSM on the bottom.Second question: Should I use poly resin and csm on the bottom of my deck
Correct, but 1708 will likely telegraph thru the poly resin, so a finish layer of CSM would be smoother after gelcoatand then poly and 1708 on the top if I want to gel coat it?
I REALLY like your fabrication work..Top Notch!!!!

Lookin Good! Good work, & Nice boat, That reminds me of my old 79'- 24' SeaRay cuddy, very similar.
Uhmm there's really no reason to use 1708 with Epoxy. It actually wastes resin and gives no benefit to the lamination. You can use regular 17oz biaxial fabric and get the same strength with epoxy. The mat stitched to the fabric in the 1708 is for the Poly to bind the resin to keep it from breaking apart.
If you're going to gelcoat the deck there's really no need to put 1708 on the top. 1708 is used for structural strength and it's not needed on the deck surface. I'd use a layer of CSM and then a final layer of 6oz cloth unless you want a bit of texture on your deck and the 1708 like JBC says will give you that with the pattern bleed thru.
454 with a bravo drive? she would go good with that! really though, a decent 350BS and an alpha would probably be the easiest and most cost effective IMO to give her a bit more 'umph' but not break the bank..
