The more you describe this motor, the more it sounds like it's been heavily modded for speed: Hi-perf heads and flywheel, different ignition, low water pickup..... I'm suprised it didn't have boyenson reeds in it. It may have some port work in it as well. Generally, when higher compression heads are put on and things get changed, the carb have to be re-jetted to a richer jetting setup. You may be getting that lean sneeze from the mods that were done to that motor.
