The coupler on the grease gun uses the grease pressure to augment the spring pressure to lock onto the fitting. A slight hand pressure may be necessary until you get grease pressure on the gun.
Wow! It sounds complicated when you write it down, but it's actually a simple mechanism.

And you pump till any old grease is flushed out or full and your done. This is the easy hub to keep greased.

Here is a bit of an update.

Just got back from an extended Holiday weekend and noticed one of the rims had grease splatter all inside of it.

Considering I used brand new seals and the spindle looked good to me, what could have caused this?

Being safety lube spindles, I don't think it is possible to "over grease" like bearing buddys, correct?

A damaged rear seal when it was installed or if the spindle is damaged where the old seal was riding on it. I would check to see if that wheel is still tight. If it's loose it could have caused some issues with the seal.

The first time I did my bearings it probably took me a day and a half. Now it takes me about an hour to do both axles. It gets much easier as time goes on. Hopefully you won't have to do them too often.

Bearing Buddies cause rear seal blow outs!!, dont over fill them..........make sure your spindles are not damaged, new spindles made today are milled with clear definition lines for bearings to ride,, old spindles are often smooth and bearings can slide around a bit causing break up.. I just installed a new axel myself as I was having bearing blow outs,, new axels and spindles are a smart move.....

The wheel is still tight and I have ordered a replacement seal. Is there anything in particular I need to look out for when reinstalling so I don't damage the new seal?

The best way to install the seal is with a flat tool that will contact the whole seal. The main thing is to not push on the center of the seal, and don't distort the outer part. Also inspect the spindle where the seal rides for damage.
Grease the seal lip before installing the hub.
