I’m having a hard time understanding why I couldn’t just put larger bunks that hang off the back and slide my winch back to match on the current trailer I have.
It looks like it would essentially be the same thing to me.

It's not the same. The boat CG with respect to the axle would move. Changing from positive tongue weight to negative tongue weight.
Just sliding your current wake boat backwards on your current bass boat trailer means that you lose all tongue weight, therefore you loose all towing stability.......and the first time you tow the boat, the trailer will want to unhook itself to pass your truck

You would also have to slide the axle backwards the same amount
As stated prior, you can modify your current trailer. By removing the center section of the last two cross beams and fabricating the structure to go around your rudder/strut/prop
