I did this conversion a number of years back on my 1990 40hp Evinrude. I'm guessing your 2000 model may be similar.
On my 40hp the mounting bosses for the traditional type pump were present and tapped (I think), but the pulse port between the bosses into the block was not machined. I replaced the VRO pump with a three hose standard pump (not sure of the p/n). This type pump also did not have a port machined in the rear of the pump body, therefore no gasket necessary.
Installing this pump, the fuel lines went to their obvious connections and the pulse line went to the pulse limiter valve. If I recall the valve was located in the lower area of the front of the motor.
This is what worked for me...
Edit: Apparently, as you stated, you have a removable plug between the mounting bosses. This being the case, I think you could go either way with a two or three hose pump.
