A carb is a simple mechanical device. If you send dirty fuel to it, of course you will have problems, as you would with a fuel injection system. If you are out 20 miles at an island, like I was this weekend, and your boat doesn't start all of a sudden, your carb would be the last thing you would probably have to think about. If you had an electronic fuel injection system that wouldn't be the case.
An aftermarket fuel injection is going to make it easier to start and your engine will run better if you happen to change altitudes. You aren't going to get much more gain than that.
