Regarding the tow capacity... Yes the brakes will handle it. Yes the power train will handle it. How will the short wheelbase do with less than perfect loading in a less than perfect condition? That's for you to decide. I can say I have towed similar loads with narrow and/or short wheel base vehicles and its all good, when its all good.

Ecoboost looks like a good engine... but you wont catch me driving one, the idea of electronic throttle control scares me

There is quite a bit more to the Ecoboost system than being turbocharged. It should prove to be a good platform, Ford does not need an under-performer at this point to be sure.

Just to throw this out there, drive-by-wire is more common than cable throttle controls and has been for some time on both cars and trucks.

I tow my Mark Twain MTB175 I/O with a Kia Sportage 4x4 V6. It does a great job for the 5-15 miles that I drive to the lake. Where it really shines is pulling it out of the water. It has a locking 4 wheel drive so I just lock it in and pull it up the ramp wet, dry, or rocky. It is rated at 3500 lb w/ trailer brakes. I'm guessing with the family in the vehicle and fuel etc. I am right at 3200 lb. I see no reason a Escape would handle 3500#.
