Sorry about the pro-speak.

Glass pans with the handles on each end.

Large--15 inch X 11 inch X 2 1/2 inch

Medium--13 inch X 9 inch X 2 1/2 inch

Small--8 1/2 inch X 8 1/2 inch X 2 1/2 inch

A CHAFER is the unit that you put the chafing PANS in to serve buffet style.

Trust me. This dude has been to more than one county fair.

Well, both dinners were a success. Thanks to all for your ideas. I'm keeping all of them for future use.:)

I went with Ladyfish's Prime Rib and Bart Sr.'s Lasagna.

I can't wait to try the rest.

Or promote the first annual Iboaters cookoff for captains!
Have the ladies enjoy their one day off during the season. :D

This is probably the best site "in all categories" that I've ever frequented!

Gotta say something here!
Some of the best recipes known to mariners have just passed before my very eyes folks.:eek:
We really do have an awful lot of very good talent on Iboats.
I can't really think of anything decent enough to present other than some Indonesian easy "slap togethers", or the ol' standby fried chicken deals. (I live alone) :rolleyes: Turkey is old hat, and rabbit is getting there.
I wont even bother with the other good ol' standby....steak!
Bake my own breads though.:cool:
I'm going to be pretty busy copying all of this stuff down on hard copy to put away for a rainy day!

Thank you for these tasty sounding entries, here's one part time power sailor who will try them all sooner or later.:D:D

Oyster Stew

One of my favorite meals is oyster stew :smiliedrool: We picked up a dozen shucked oysters at the store and had them for dinner tonight.

Start by placing the oysters and juice in a pan.

Additional items needed are Half & Half, 3 tbsp butter, OTC crackers ( Trenton Oyster Crackers), salt, pepper and some paprika.

Heat the oysters until the edges curl but be careful not to overcook them. Also add the three tablespoons of butter, a little salt and fresh ground pepper.

Now add the half & half and heat it back up. It's very important NOT TO BOIL the milk broth or it will seperate/ curdle :ack:

Here's the oyster stew with crushed OTC's and topped with Hungarian Hot Paprika :thumbs:

back when i was a kid. mother kept a big tupperware container in the Freezer. every night all the left overs went into the container. Friday night the container was emptied into a big pot and heated. these were some of the best meals i have ever eaten.

later in life i had a large house, and rented rooms, to friends. we did the same thing. they loved Friday night.

Buttermilk Pancakes

2 cups buttermilk
2 eggs, NOT beaten
1 tablespoon melted butter
1.25 cups unbleached flour
1.5 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon sugar
.25 teaspoon salt

Stir together the buttermilk, eggs and butter.

Sift together the remaining ingredients.

Combine wet and dry ingredients and whisk gently until smooth.

cook and enjoy

This one isn't fancy, its simple and feeds a crowd. Very hearty too. Great for hunting/camping. Warms you up on a cold night.

Taco Soup

5 lb. ground chuck
5 packages taco seasoning
5 packages RANCH dressing mix
5 cans whole kernel corn
5 cans chopped green chilies (hot or medium)
5 cans chili beans 12 oz.
5 cans kidney beans 12 oz.
5 cans diced rotel tomatoes and chilies
5 cans diced stewed tomatoes
8 cans water (about 24 oz. of water) You may want reduce this if you want it thicker

Brown the beef and drain, add taco seasoning and RANCH dressing mix while simmering. Add remaining ingredients to a large soup/chili pot. Bring this concoction to a slow boil. Add salt and pepper to taste. Reduce heat and simmer for 30 minutes.

This has the same properties as good chili, in that it gets better the more times you re-heat.

Serve with Frito?s corn chips on top, a dollup of sour cream, green onions, and/or shredded longhorn cheese, fresh sliced jalapenos.

This recipe makes enough for a small army. If you want a smaller amount use one can each of beans, etc. to every pound of hamburger meat.

You can't mess this one up. Kids love it too its, not too spicy if you replace the Rotel with more stewed tomatoes.

I have Barts 'Yummy Chicken' in the oven right now. 1 hour to go and I will let you guys know how it is. My only concern is if there will be enough liquid for the stuffing mix. Seems a little dry going into the oven.

2. Put several large pieces of meat on sticks
3. Consume large quantities of adult beverages
4. When fire burns down to coals, suspend meat sticks over it
5. When ya can't wait any longer, EAT

Taco Soup:

1 can of each of the following:

Black beans
Navy beans
Chili beans
Rotel (I use the Hot style but any will do)
Whole kernel corn
Chopped chiles
1 pack of taco seasoning (Hot or Mild)
1 pack of Hidden Valley Ranch Dressing mix
Add canned chunk chicken. Don't drain the juice off of anything (including beans). Just pour it all in the pot. Easiest meal you'll ever make.the most difficult thing is opening up all the cans.



Adjust the "heat" if you want by using mild/hot Rotel, taco seasoning or chili beans.

My contribution to the "Iboat's Manly Men of the Sea Cookin' Book" :D

Key Lime Cheesecake
2 pkg. (8 oz. each) Cream Cheese, softened
1/2 cup sugar
1 tsp. grated lime peel
2 Tbsp. fresh lime juice
1/2 tsp. vanilla
2 eggs
1 graham cracker pie crust (6 oz.)

PREHEAT oven to 350?F. Beat cream cheese, sugar, peel, juice and vanilla with electric mixer on medium speed until well blended. Add eggs; mix just until blended.

POUR into crust.

BAKE 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Top with whipped topping just before serving. Store leftover cheesecake in refrigerator.

here's my favorite way to cook salmon,.

I was sceptical, but it's actually very good,.
it passed the wife/friends test as well,.

1. throw pieces of pecan (smaller the better) in a semi-hot pan,.
keep them moving,. and try to brown them up evenly, when they start to smoke,. remove them from the pan and save for later,.
(depending on your taste you may want more or less,. i use about a handful)

2. once the nuts are out, dump 1 can of coke-a-cola (original,. not diet,. not pepsi, just real coke) in the pan, and lower the heat to medium low,. and let it simmer for a while,. the idea is to reduce it down to a syrup,. not incinerate it.

3. cook the salmon however you like,. grill/bake/broil/microwave/campstove/etc
just don't over cook,.

4. when the coke is reduced to a sticky syrup, add the nuts back in, and add some tabasco.
~tablespoon or to taste.
stir it around,. and then spoon the nuts/sauce over the salmon on a plate,.

5. serve it up, and don't tell what the secret sauce is.

the result is a smoked nutty, sweet, but spicy salmon,.

i've tried it with different fish, different nuts, etc,.
but think the above is the best combination,.
if you like more nuts,. add em.
if you like it hotter or milder,. adjust the tabasco,.
but it does require a bit of the hot sauce, as without it, you just get sweet salmon,. with no contrast.
