I think you are referring to the "strakes". Yes they can be filled with pb and stringers above. I would stick w/epppooooxxxyy. If you use poly then you will need to add chopped glass to your peanut butter.Do you have any pics with the old stringers still in?
You can absoluetly fill those strakes. Remember...you can eeeeeppoooxxxy poly wants a cracker but you cannot poly to EEEEpppooooxxxyy. Also you will paint eeeeppppooooxxxyy, does not take gelcoat too well. Thanks for the pic. Makes sense when we all can see them. Personally if I was going eeepppooooxxxy I would just use that.

Thanks Kcassells, surgery went well, hurts like hell but that will pass in time. I will not rush it. The docs also informed me that the hip is gonna need some work also from when I fell half way down the mountain a few years ago on a fire, just can't win at all. Hey Kcassells, hope all's well with you. I want to run a thought by you, I was thinking of laminating two layers of 19/32 acx plywoood together for my stringers. The longest stringers are 16.5' long and would give me over an inch thick . I am getting going on the boat again when I can miss the hundred degrees days we are having lol I guess I will not melt.

Yes you can do that. But what was the thickness that came out? You can also do a butt joint. where two stringers mate up. Very strong and acceptable. Top pic is what I'm talking about. Bevel the ends of the two mate boards so glass will roll on. Or feather to an angle with pb. They can be screwed or pb's together or both.
The original thickness was less than 3/4 and where pine boards. I have a bad or good tendency to over build things. Lol. I guess I should ask and probably already know the answer but should I try to stay at or close to the same thickness of the original, the motor and fuel tank area was 1-1/2" and was thinking that maybe I should beef that up a bit. I have a lot of time on my hands and tend to over think as well.
Go with typical ACX/BCX from your local supplier. This is a case where "Bigger" doesn't mean better. LOL. You could go with and feel comfortable with 3/4"/ 15/32 exterior. Meaning not pressure treated lumber, Exterior grade ply.
You can use what you feel comfortable with. An old Fart Woodonglass glass always told me ..."it's your boat, you can do what you want."
