Pull the dipstick and see if it's way over full and there is evidence of water. If it is you don't want to know the reason why you have no water in the block.

Re: hmmmm

there is an external crack in the block or leaking core plug that only leaks when it's warm

Well that is possible but it would have to be an identical crack on BOTH sides of the engine.

He did check the oil as noted on a previous post. Even if it was getting in the pan, that wouldn't prevent the rest of the engine from having water.

The only reason I can think of is there wasn't any water getting to the engine.
Thus my question about how long he ran it.

Re: hmmmm

Just too clarify. You never run a boat without a thermostat or diverter. Say hello to a craked head if you do.

Re: hmmmm

well, I dug around some more, and never got any water... so yesterday I put antifreeze in through the thermostat opening, and I definitely got flow through the open holes, through the block and through the manifold. So....where did the water go?

Who cares??? I mean really...you're not having any running issues and you winterized the block and manifolds........so who cares where the water went. If there is none in the oil and you seem sure you're getting flow through the block...then you either have a leak low on the block that you are missing or there is nothing wrong.
