I've heard a lot about Memphis and their BBQ, some say Texans don't BBQ, they grill.

Some say the secret is in the sauce, some say to hell with the sauce, the flavor should be in the meat.

What is your definition of a good BBQ?

Just had BBQ Chicken cooked on the grill (w/charcoal & hickory chips) for dinner. That was good BBQ.

Oh.....................and if you don't care to read about oil and gas prices.................................well then.......................................oh lets see...................................try, maybe..........................not clicking on them...:p:p:p:D:D

The definition of BBQ varies from location to location. There is no standard, sort of like "What is good beer?"

"The secret" is in the tastes of the consumer.

BBQing is a fine subject.
A good porter house stake just a little salt meadum rare.
Most other stakes maranaded in a brown sugar/ soya sauce.
Beer can chicken is to die for.
A roast done on the spit well its got to be supper time im talking about food.
Most of all you need a heavy oak smoke.

In Germany they had Roasts on a vertical spit..... the juices flowed down and they always cut from the bottom..... wow that was good but not BBQ.

We do the indirect smoke heat / dry rub in our family.

I grilled some burgers for dinner tonight. While I was standing there waiting for them to cook, I couldn't help but to think about what it's going to cost to refill my propane tank. :D

We do the indirect smoke heat / dry rub in our family.

I've experienced meat done on a vertical spit down in Brazil, its done above an open wood fire. I enjoyed that.

A half steer on the spit, in Montanna, on the Bar BQ ranch. Nothing like the original.

True BBQ doesn't need a sauce, it'll stand on its own. Thats not to say that a sauce is a bad thing. Many times a sauce will make a meat please a bigger crowd that might desire a different taste.

You know all this already, you used (theres that southern coming out in me) to live in Dallas didn't ya?

Yes i once lived in Dallas, good memory you have. Having just sold off most of my retail holdings, some of the employees have decided to have a BBQ in my honor, one of the fellas is from Nashville,TN. This fella claims that the best BBQ ever is to be found in his state. A couple of Texans vehemently disagreed with him.
One of the Texans unequivocally told the Tennessean that the best ever BBQ is eaten in Texas.
Me not being an expert in such matters listened for a while to some of the complexities involved in what goes into the process of a good to die for BBQ.
I asked the question here, because i would like to believe that i would get some passionate but unbiased responses.

Texas has great BBQ, especially brisket ! However, on a visit to see my Dad in Tennessee, I had the best dang BBQ'd pork I ever had. The pork was pulled and had a vinegar based sauce. YUM!

It takes years to perfect a technique and BBQ'ers are VERY proud and competitive. Sounds like you're gonna eat some great BBQ. :)

It all depends on where you are, what determines BBQ. I BBQ all the time, sometimes it's Memphise and other's it's good ole Texas way. :D

Our BBQ tends to lean toward what the ranchers and cattle drivers had available, although horse meat was banned not long ago. :mad: Our state tree makes for some great BBQ flavor when smokin your meats.

For flavor, it changes for me. Sometimes I am in the mood for pulled pork or maybe a brisket. I can say that I have had great BBQ all over the country. One of the better places here in DFW is Big Al's over by Love Field airport.

Gotta love that BBQ.

Oh, no. Not the yellow stuff. True BBQ connoisseurs don't even count that as BBQ!;)

I lived in Memphis for 13 years. No one can touch the BBQ there. If you ever have a chance to go to "Memphis in May" take it. They BBQ everything you can think of every way you can think of right next to the river. The dry ribs at The Rendezvous will change your life...

Dead critter cooked over mesquite or hickory coals. Sauce or no sauce to taste.

They may call it that in NC, but I can't say as I have ever heard of it outside of NC. :D ;)

Heck, what other state than Texas can say they have toast named after them, and a hole line of custom Mexican food called Tex-Mex? :D
