Having had the good fortune of traveling a good bit around these United States, and being the BBQ connoisseur I am. I believe it would be imposable to pick a single style or type of BBQ to define what is "good BBQ". All I know for sure is you'll find the best BBQ at local establishments, that often times are off the beat-n-path.

Agree 100%. In Memphis it was always at the little places, sometimes in the middle of neighborhoods, run-down building, air-conditioner was a window unit mounted over the door that dripped on your head when you walked through, but the food!! Man, you guys are making me hungry for it now...

Hopefully nowhere. You call it custom, but I have come to the point where I am going to state unequivocally that Tex-Mex simply means Bad Mexican Food. Bleeecchhhh . . . Why in the flyin' flip would anybody warm their honkin' salsa? That one gets me every time, and I have to send it back for propper cold stuff. Also, 99.99999999% of the taco shells look like they came out of a box, pre-formed and pre-cooked. Annnnnnd, that queso carp is nothing more than Ball Park Nacho cheese goop. I will give them two things that I have come to love: 1) Stuffed Avocados. Can't get those here. and 2) Grilled Quail. You have to go to a very high end restaurant here to get Quail, and it is one of my favorite foods. Other than that, Tejanos haven't got a clue what good Mexican Food really is . . . :eek: :p

BBQ? I am with LadyFish, BBQ brisket in Texas is pretty hard to beat. Oh, wait, does that Grilled Quail count?

Eastern NC style is great, Its not yellow but sorta white . the sauce is vinagar based. Dont use sugar and all that mess.

Carolina BBQ is ok. I've had it a couple of times. It makes a pretty good sandwich.

Most of the places around here smoke butts. Then they'll chop or slice them. They'll usually have several sauces to choose from on the table. I prefer a mustard based sauce that's got a little twang to it. Then I add little Tobasco added to give it some spiciness.

Brunswick stew is my favorite though. Just like bbq; I like it twangy, not sweet. None of the BBQ joints in town have good brunswick stew imo. However, there's a hotdog joint down the road that buys brunswick stew from a meat supplier west of Atlanta. It's the best brunswick stew I have ever had. I could sit there and eat a gallon of it! Sometimes I even order plain hotdogs in a bun and pour brunswick stew on them like chili. That's some good eatin' right there son!:D

Nah...

I've only had it a few times. Each time it was called "Carolina BBQ". Twice in Spartanburg and once in Raleigh. It looked to be boiled down or something. Sort of like mashed potatoes and scooped out with a big spoon. Much finer than the stuff here, like it was a puree. It was light in color but I don't know if it was yellow. It had a little twang to it which I liked (not sweet at all). It was well suited to going on a sandwich because it didn't fall out like the chipped kind does. So whenever I hear Carolina BBQ I just assume it means BBQ that's prepared that way.

I did go to the hotdog joint today for lunch. 2 chili dogs, 1 brunswick stew, 1 dr. pepper. $10. They are proud of that food!

Agreed! In Memphis, The Rendezvous is nice but over priced and over-hyped. Leonards, Neeley's, Interstate and Tom's are some of the best. Tom's was on Diners, Drive-ins and Dives a few days ago. Tiny place but good eats!

Better know what you want before you walk up to the counter. Angry old black women with cleavers are best not argued with.;)

Same with burgers. Most places pile so much junk on them you can't taste the beef. Maybe a thin slice of onion or a thin slice of sharp cheddar, but nothing else.

Totally agree with you. The wood should give you any flavor and any sauce should only supplement the meat of choice. I'll use sauce on pulled pork and a dry rb on meats. Around here, sauces on your stake are a capitol offense. :D I find it funny when I travel that the further NE you go, the more A1 you find sitting on the table. :D

I only eat it. I keep saying I'm going to buy/build a smoker but it hasn't happened yet.

I cook it. I have done several catering jobs and have a trophy in the garage from a contest. simply put- You can't beat my meat.

That being said I like to eat others cooking too. I like real eateries, not places like Dickys.

Heard about it. Never been there. I thought they just did burgers.

Ive never went into competitions with cooking but i shure have fun doing it.
Ive seen the contest thay have down in the states on TV. Boy it looks like some harsh competition. Some of those guys have some interesting BBQs and put alot of time into it.
