They are usually in 1/16" increments on diameter. Like 1/8", 3/16", 1/4" etc. As for length, they need to be 1-1/2 times the rivet diameter longer then the materials being riveted. For example, the materials being riveted together total 1/4" thick when stacked together and the rivet is 1/8" diameter. Then the rivet length need to be 1/4" + (1.5*1/8") = 1/4" + 3/16" = 7/16". Then after bucking thhe rivet the bucked side should have a shop formed head that is 1/2 the rivet diameter tall and 1.5 the rivet diameter in diameter. So for that 1/8" rivet the shop head should be 1/16" tall and 3/16" diameter. To get the correct length before installation, you can get a linger length rivet and cut it off using a rivet cutter, or in a pinch, I have ground or sanded them to length.
