I think Rellik was just reacting, I don't really think he would have freaked out, I have a racing background as well and I have been rear ended similar to the video totaling my sport bike as well albeit I didn't stick the landing! First thing that goes through your mind is what did just happen hows the bike what did just happen hows the bike what did I do wrong am I ok? etc etc your mind is racing and it takes time to calm down and get things back in order, you can see it in the video, he looks at the ground sets his hands on his knees, looks at the bike back to the knees and then walks over to the sidewalk, very common reaction to nearly getting killed, the fact that the woman comes over to him quickly probably hasn't made it past the guys ears since his brain is in overdrive still. I bet he ultimately told the lady he was fine and gave her a hug(bet me he did) but it was probably after he came down so to speak.
I also agree that those that have participated in organized racing have a huge advantage in driving everyday especially on sport bikes, you just know someday its going to be your turn and your brain is constantly evaluating threats, so when you move into a car your brain doesn't change the way it operates even though you are now much safer in a car, also I have that seat of the pants factor that comes to light when the rear end loses grip on snow and ice, most of the time the passengers in the car never notice the rear lose grip but I know it I felt it and never got off the gas to counter it just a small correction unnoticeable to the rest of the car.
