Re: THE CULINARY ZONE, recipes welcome

I know this might not fit the definition of a recipe but here is a suggestion that probably many of you might think is strange. I got it off of another site that I know some of you frequent from time to time so some of you may have seen this already.

Add 1/4 cup of brown sugar (I use dark brown) to every pound of ground meat when doing hamburgers, whether BBQ (which I think is the best) or frying or whatever. Just mix it in with other seasonings that you may want to use, form your patties, cook and enjoy one of the best burgers ever. At least it'll be different.

I know it sounds strange but I think you'll like it. I've never had a bad comment about using it once people taste it although I have gotten many strange looks when I tell them why it tastes so good.

hmm that really does sound good - whats the flavor like????

COLE SLAW

1 pkg. slaw mix
Red cabbage cut up (as much as desired)
2 ? 3 carrots, grated
1 medium red onion, finely chopped
1 green pepper, finely chopped
Blend together:
1 c. salad dressing (I use Miracle Whip)
1/3 c. sugar
1 t. Montreal Steak Seasoning
1 t. celery seeds
? t. garlic powder
2 T. apple cider vinegar
I prepare the salad ahead of time and add the dressing mixture just before serving

But is it spicy/tangy??? Again, sad to say, but KFC has the best here - my favorite was in W. VA. in a teeny town in the hills, on top of a cheeseburger! yummmm

It's a little hard to describe but kind of a tad sweet but not overly. Also depends on what other seasonings you add as to how it turns out but it's definitely a great flavor. I have a hard time now eating a burger without it.

All I can say is to try it and see. That's about the only real way to find out if you like it or not. You can still use your regular seasonings and BBQ sauce and whatever else you like.

KFC's secret ingrediant "we think" is "HORSE RADDISH"
if not it sure spices up the slaw. :D

The vinegar and Montreal Steak Seasoning give it just a hint of spicy/tangy. A little more vinegar if you want it to have a little more tang ... hmmm, horseradish ... that sounds like an added plus.

the wifes cook book says, one pound dried pasta= one and a quarter fresh
"approx" and feeds 4-5 as the main course.(always serve fresh)
I would also count on a cup of sauce per person minimum as well as 5 meatballs per person, if younger, 4 for an older crowd, mom, dad, gramma, grandpa!
good luck
have fun

I hope the spaghetti supper went well.

"The secret of good white rice"
Had some people over for supper, and they wanted to help with dinner, Basil Beef on a bed of rice.
I had to show them the trick to a great fluffy rice with no starchy taste.
First, short grain rice take what your going to need, lets say one cup, put it in the pot. NOW turn the tap on and rinse till the milky colours 80% + gone.
Pour off rinse water, and top with two cups water, 2-1- water to rice
Bring to a boil, turn temp down to low let sit.
fluff the rice when cooked.
Thats great rice

update...i asked this earlier in the thread:
anyone use cameron's stove top smoker?

402430

they work great. can use it stove top, on the grill, on a campfire, in the oven...
they're great for small batches like smoking a few pieces of chicken for smoked chicken enchiladas or a couple of steaks, rack of ribs, veggies. you can smoke bigger things by making a tent out of foil instead of using the lid that comes with it....yada yada yada

NEW>>>here's a recent rack of baby backs....45 mins on the stovetop smoking. then 45 mins in the oven on 200 degrees and lastly a few mins under the broiler after brushing some sauce on.
DSCF1343.jpg

they stay in the same pan the entire time and it all goes in the dishwasher.

this is the sauce recipe, it's really hot so beware:
2 cups cider vinegar
1/2 cup water
1 tablespoon red chili pepper flakes
2 tablespoons sugar
1 1/2 teaspoons Worcestershire sauce
1 1/2 teaspoons kosher salt
1 1/2 teaspoons black pepper, freshly ground
1 cup ketchup
simmer in a saucepan for 30 mins

CrappieMagnet's Beer Bread
Beer Bread

12 ounces beer,at room temperature....any flavor
3 cups self rising flour
3 tablespoons sugar

Mix flour,sugar and beer
Mix till moist.***Don't beat the mixture***
Put it in a greased loaf pan.
Bake at 350 degrees for 1 hour.
Right away after it comes out of oven, pour 1 stick of melted butter over the top of bread and remove from loaf pan.

And my Pecan Apple Bread version.

Use a bottle of Sparkling Hard Cider (I use Strongbow Dry English Cider although Woodchuck might be easier to find) instead of beer and add 1/2 cup of chopped pecans, 1/2 cup of chopped apple and 1/2 tablespoon ground cinnamon.

Re: THE CULINARY ZONE, recipes welcome

Now that I'm home I can add another of mine.

Brat Stew

Ingredients

5-6 Brats
1 Can of French Cut Green Beans
2 Cans of Cream of Mushroom Soup
2 Cans of Sliced Potatoes
2 Cans of Sliced Mushrooms
1 Small chopped Onion (optional)
Salt and Pepper

Instructions
Place Potatoes in large pan, do NOT drain, and bring to a boil then reduce to simmer.
While potatoes are heating, fry brats in a skillet until center is firm but pink.
Slice the brats and return to skillet and finish cooking them.

Add cream of mushroom soup, green beans, mushrooms, onions & brats to the potatoes and heat for 10-15 minutes until hot. Stir occasionally to keep from sticking.

Salt and Pepper to taste.

Makes 4-6 servings.

..... still looking for a good beans recipe people. :D

Here's one of our favs...

1 pound dried beans
2 tablespoons brown sugar
2 teaspoons salt
1/4 teaspoon ground black pepper
2 tablespoons brown mustard
2 tablespoons molasses
1/4 cup tomato sauce
1/2 cup maple syrup
2 strips bacon, cut in pieces

Preheat the oven to 325?F.
Cover the beans with water in a large pan, bring it to a boil and then simmer about 1 hour or so until tender. Combine everything except the bacon to the beans, lay the bacon on top. Add enough water to cover everything. Cover with a lid. Bake for about 4-1/2 hours{taste test for desired tenderness}, make sure the beans don't dry out. (Add more water if necessary} Uncover for the last half hour or so to brown the top if desired.

note: lowering the temp{25 -50 degrees} and cooking longer equals more Mmmmmmm :). For faster results you could always use...ahem...canned beans ;) hope ya enjoy!
