Sound like your on the right track by installing to the plug on the block.
Others may not like my method, but here it goes. I cut my water line with a box cutter. Then I installed one of those "T" fittings used in landscape drip lines. From the "T" I ran a line to my guage in the dash. I did use a little sealant around the "T", and I regularly check for leaks. I am now almost an entire season with this installation, and it is working great and leak free. My pressure guage shows a steady 23 psi. I would never advise someone to deviate from the manufacturer instructions, but in this case, I believe my method to be adaquate. You can stick with the manufacturer instructions, but I thought I would offer what I consider to be a suitable alternative.
