What oil should I use in a tilt?

There is hydraulic fluid and there is hydraulic fluid. Brake fluid is not the right kind to use.

ATF or 30W motor oil, depending on what you have.

So - What are you working on?

brake fluid is hygroscopic (absorbs moisture) and not the best for anything marine.

as GA stated, most likely ATF.

If it is old style, pump in boat, the speced oil was 20w oil. The integral style was speced with ATF or power steering fluid

Old style was 10-20 or 10-30 depending on where you are. In Michigan I'm running 10w-30.
