Anyone here interested in Japanese kitchen knives?

I don't recall the specific angles. If you Google the question you'll find 15 to 22 degrees per side for kitchen knives. Thinner angles are sharper, but are very fragile and susceptible to nicks and damage. ....I think my guide is 17 and 12 degrees. But I fuss over my knives. I only cut on...

Anyone here interested in Japanese kitchen knives?

You may be sorry you asked. I "slice" stroke the stones from top down, using the little block to get a vertical start and eyeball to the bottom. I slice stroke from bolster to tip in one stroke on shorter blades. 20 strokes per side for each grit. On the longer blades I take two slices, each...

Anyone here interested in Japanese kitchen knives?

Below is my sharpening fixture for my Norton water stones. Surprisingly the keener angle is for roughing, the wider angle for finishing. The theory is the more acute rough angle will result in a very sharp, but also very fragile edge. So the finish side puts a slightly wider included angle on...

Anyone here interested in Japanese kitchen knives?

We have a full set of Henkels Four Star ss, plus spares that we use at our river house. My pop told me, and I basically agree that high carbon takes an edge better than ss. I think Henkles are high carbon ss. Years I bought a pair of two-sided Norton "Japanese" water stones. 1000, 3000, 4000...

HVAC Heat Kit Installation Electrical Question

Thanks. I plan on contacting Rheem soon. They make a variety of heat kits for this air handler. I'm hoping they have one in my amp/kW range that would work with a two stage thermostat set in heating mode. If so my goal would be automagically solved.

    Prime Rib?

It's been a while, but I've previously purchased whole beef short loin. Whole means rib bones included. I love tinkering with my Henkels Four Star knives. So I'd bone the thing, carve out the New York Strip, and carefully separate the tenderloin. ...good dog Zeke got the leftover T bones with...

    Prime Rib?

Yea. It's interesting how a big piece of meat, beef, turkey, etc. will continue to cook from the outside in. I learned the high heat then low heat roasting method from my copy of the 1930's "Joy of Cooking". ....I cringe when I see people putting a nice chunk of meat in a roaster. Authors of...

HVAC Heat Kit Installation Electrical Question

I believe I remember you live in the mid-South. TN? So more hours and stress on the condenser unit than up here in IA. ....late July and early Aug keeps it running hard. Otherwise not much. So my luck may just be less use. New installation is 100 miles east in Dubuque IA. Same duty cycle on the...

HVAC Heat Kit Installation Electrical Question

We had Rheem gas furnace/central air in our main house for 29 yrs. ...no real problems, but I had to replace the occasional temp limit or air/vac sensor. It was working fine, but getting old, and critical parts like HXs were unavailable. So I replaced it with a modern, more efficient Rheem...

HVAC Heat Kit Installation Electrical Question

Thanks. I'm trying to find a low temp thermostat so I can keep the place and water pipes from freezing when we aren't there in the winter. ....I've drained the system for the last nine yrs. ....that is getting old, like me. My plan is to set this up as a stand-alone low temp thermostat in the...

    Prime Rib?

I roasted an 18# whole boneless ribeye beast yesterday. Here is my step-by-step: 7:45 am. Remove the thawed roast from the refridge, and let it come up to room temperature. 12:45 pm. Peel off the outer slab of tallow. Don't pitch it yet. Fillet the nice little fingers of rib meat from the...

HVAC Heat Kit Installation Electrical Question

"No problem, the auxiliary heat coils are 240 volt elements and would cause no unbalance even if only one is running." Yes they are, thanks, I just reviewed the wiring diagram. This is good since our REC gives me a 60% discount on electric heat Oct-June. ....cooling load also counts if I...

HVAC Heat Kit Installation Electrical Question

I'll be doing a DIY installation of a new heat pump w/heat kit back up at our river house. I've sized the heat kit based on the worst case sub-zero Iowa winters. But I'm concerned under average winter conditions the system will over deliver heat in short interval blasts. With gas fired furnaces...

Just thought I'd share a nice photo.

I hope she's bouncing the sun back up our way. Although I believe today's sun will be around three seconds longer than yesterday.

Sorry @Begester , you were looking for serious responses, and got one or two from my count. So I hate to pile on. But if I had deep enough pockets, I'd look at this. Mother of All Bowriders. https://www.formulaboats.com/430-super-sport-crossover/overview

    Empty trailor weight

..so it's easy for me to spend someone else's money. A marina could lift your boat off the trailer, then you could do the scale thing. That is what I'd do in frozen water Iowa. ...maybe you could launch and tie up your pontoon, and head for the scales....if you are south of the Mason-Dixon line.

    Home Renovations - Weather Permitting

I've been picking away at finishing the walk out basement at our river house over the last 6-7 yrs. Mostly prep work. I beamed up the 20' span that was supported by a block wall before the first owner added 16' on the length of the house, and removed the block wall. Sump pump, new gutters with...

    Empty trailor weight

..not sure of Florida's requirements. The simple way is to go to a scale with the empty trailer and tow vehicle and weigh both. Unhitch the trailer and weigh again. The difference in weight will be the trailer's weight. Most scales have certified weight print outs. ...maybe good enough for FL.
