    rinda and vessel view are looking at the failure prone sensor I would unscrew the sensor and screw in a good quality mechanical gauge and read what is going on.

    blisters are uncured resin reacting with water happens to moored boats without a barrier coat or bottom paint as stated above, grind them out, dry it out, should only need VE fairing compound, barrier coat and bottom paint.

    manuals are copyright protected. the process of rebuilding the carburetor will be similar to any small engine. make sure to get an OEM carburetor kit.

    OPs engine is a Mercruiser SBC 350 reman with anywhere from a 0.020 to 0.060 overbore sold as a "357" so it could be a 352 cube, 355 cube or 357 cube. Unless you look at the reman tag, neither you or I know the displacement.. you are arguing for the sake of arguing
