PS- definitely look into the hot running...my limited understanding of outboard engines, is that since they have an unlimited supply of cold water coming in, the water coming out should never be much more than very warm [maybe, 140-160 degrees F]...
Could be a bad sending unit, temp gauge, or you may have something more serious...I hope not and also hope you can get it sorted out...
As far as windy and shaky video, that's OK, too...it gives us here on dry land a real feeling of action!..
