    Fun project. I went from a 3.0L to a 4.3L. Same scale as you going from your 3.7 to a 5.7L. I'd go the 5.7 in a heartbeat. 2 barrel carb and nothing fancy and your boat jumps out of the water and is as fuel efficient as a 5.7 can get. Find a donor boat.

    Other cause for dieseling is overly rich. Deposits in the cylinder and on the piston stay hot and lit up.

    A coupler is a rubber filled steel cone with a plate and bolts holding it to flywheel. What's to make noise with nothing attached? I guess possible it is cracked through one of the ears, but even then, when nothing attached?

    That part should be fine, no difference at the back end. Only takes one long bolt though. Take a piece of broomstick, hold against your ear and touch different parts of the motor. El cheapo mechanics stethoscope.

    You can and should pull the lower cable off the linkage and shift it by hand. Anything but butter silky smooth and you need to replace the cable.

    Backfire = lean. Quick way to burn a hole in a piston. Go through the carburetor.

    I agree with your losing oil is reason to pressure test. As long as you are at it, try your test at 5 pounds instead of only 15 - and turn the shafts during said test to see if you find a problem.
