    One other thing noted I'd have to check... the 4.3 pushrod slots look like they could get pretty tight if I increase the ratio.... Might need to clearance them a tad if I end up using the 1.6 rockers....

    So I've started planning phase 2.... Couple of things on the punch list though some I may make a new thread for just for some better opinions...     True. But poultry can be weird mainly due to more questionable handling during slaughter and processing when compared to say beef. Though you can get chicken sashimi... I'd pray they handle it right though and I'd never try it.

    Eh... I'd speculate brining does relatively little to inactivate pathogenic bacteria considering what we have to do at work to inactivate it. Honestly, seeing how some people handle brines and just cooking in general... I probably wouldn't trust alot of food from just anyone. (And don't)

    I mean technically you get a very very dilute amount of HCl but the reaction heavily favors the reactants. There are much easier ways to make HCl if one was so inclined... The added salt maybe increases ionic strength of the solution a little. Which might help. But you can dissolve a seashell...

    I've cooked turkey a lot of ways. I think my favorite was a brine then jerk rub on the smoker. I'm at the point now where I think I am fine with the once or twice a year meal on it though.

    Not to stray too far off topic... but thinking about it, I probably should've changed the pressure bypass in my road car when I added the oil cooler to the 350... Which actually would explain a lot.... Another winter project.
