    They are good engines but some of the parts are hard to find. You can also go with a GM 4.3 V6 Vortec which with a 4 bbl carb will give you 225 hp.

    From the pic it appears that the port side (cyls 1,3,6) are running very rich, could be the idle adjustment or clogged air bleeds on that side. If the carb is not totally cleaned out with proper float adjustment, good needle valve etc it should not continue to foul plugs like that.

    1988 Four winns 180 horizon, were these OMC or Mercruisers

    OMC bought Four Winns & a few other companies around 1986 so many older Four Winns & Chris Crafts have OMC Cobra power. From like 86-96 or so. I would not be concerned about a Cobra to Merc conversion because it’s pretty straightforward no transom work needed.

    Those bolts usually get only about 25 ft lbs so that should be ok. Just make sure the sealing surfaces are really flat. That’s the weak spot of this design. The pre cat converter exhaust Volvo used is the wet joint design. Just like what Mercruiser used pre 2002 or so.

    There should never be any fuel leaks especially on a gas inboard that’s a real hazard. Starting issue you many need to go thru every connection in the starter circuit to track down the bad connection or source of resistance.

    Great work! while you got the engine out, if there is any question about the condition of the power steering actuator, replace it! They are a bear to get at when the engine is in place. I had to remove the rear seats and both exhaust manifolds to do that job.

However, on the old models the way you would test for leaky head gasket putting combustion gas into the cooling water, was to replace the hoses feeding the exhaust manifolds...
