The warning horn sounds for:
Motor over heat
Trans temp over heat
Low oil pressure
Check your oil pressure with a mechanical gauge. If it is in good shape then most often the oil pressure switch is the issue. Not saying this is your issue, but its just what happens most often.

Someone prior to you changed the wiring would be my guess. Don't see any way it would work without power going to the trim switch. I had an issue some time back and for a quick fix I ran a new wire. Later found the problem was the 3 prong plug

My Rinker is setup same way, the keel rollers are there to keep bow from hitting when toading because the bow V is deeper. Once the hull is on the bunks the rollers do not touch
Hand adjust the shoes out until you can install the drum where it barely touches. The shoes may need to be centered a bit. Once there they will self adjust as they are used
The shock on the coupler may need to be replaced
