Chevrolet Demon 5,7 l marine engine

without a year, cant help with the model. however I am speculating...... if its an AQ271, or an AQ290 or AQ311, it would have a holley 715 CFM 4150 carburetor that the prior owner could either have swapped out the bowls for Demon Carburetor bowls. hence the confusion. Again, I am speculating...

    Clanking/rattling sound after prop change

Two red flags. Going from aluminum to stainless, you normally need to drop 1" in pitch. You kept it the same Going from 3 blades to 4 you normally need to drop 1" in pitch. You kept it the same To go from a 3 blade aluminum to a 4 blade stainless, you should be at 17p. Not the 19p you...

OMC 3.8l dying at high rpm and weird cranking issue.

since you used the trim and it died, you have a bad connection somewhere - most likely that iffy battery cable could just spend $45 on a new mechanical fuel pump. vs the $100 for a marine rated electric fuel pump, the required oil pressure switch, relay, etc.
