I am a budget Spreadsheet type of guy. I am compliing all of the info and pricing on products that I need. I will be doing the same job you are on your boat and was wondering if you could help a bit.
Did you replace the motor mounts or just the transom? what about the wood on either side of the transom? sorry if I missed that info, sometimes I can be a bit dense!!!

First I have to say, I stopped keeping track a while back. It was starting to depress me. I figured what I do not know cannot hurt me. I am financing this rebuild in a very creative way. I deal with very wealthy customers and when they want to upgrade their home theater equipment, I keep all their old stuff. I have so much laying around it is pitiful. So I started selling the stuff on ebay. It all still works fine, but it is just old. I was amazed at how much money I have made. So I have not had to dip into the family funds yet.
Anyway on to what I have used.
1. I did buy some front motor mounts from ebay since my old ones are rusted. I did not replace the transom plate though. As far as the wood, I replaced the transom, two of the ski ladder mounts, 1.5 foot of the starboard stringer and a little of the deck.
2. I have used 5 gallons of resin, 4 of the large packages of CSM from west marine, 8 yards of 6 oz woven, 2 large packages of 1708 biax from west marine, about 6 paint brushes, 20 of the quart size mixing cups, 10 1" rollers, 1 roller handle (it got so nasty I threw it away), 1 4X8 sheet of oak plywood, two gallons of acetone... I think you get the idea.
You will use twice the amount you think you need.
I might make a video later tonight that goes over everything if you would like.
